Easy Weeknight Fish- (and other random happenings)

We have had a crazy few weeks!!  We were out of  town for a while and when we got back we were very busy with cupcake orders!  I was also so excited to have Alison from Paleo/NonPaleo share my Paleo success story on her blog. Go check it out!! 
I am so thankful to have a husband who loves to cook. I was baking a batch of cupcakes for a customer so he whipped up a delicious meal for us. It was very tasty and perfect if you don't have a lot of time.

2 Tilapia fillets
1 cup of mushrooms (pre sliced and rinsed)
1 cup of Pico de Gallo (freshly made from our grocery store)
1 tbsp. Wildtree fajita seasoning
1 tbsp. Coconut oil for the pan

Coat the tilapia with the fajita seasoning
Put coconut oil in the pan and sauté mushrooms until they are soft
Place the tilapia into the mushrooms and oil and cook 3-4 minutes on each side
Add pico and the juice of a lemon to the mushrooms and tilapia.
Sauté for 3 minutes

We visited Healthy Way Dairy today. Chet wanted to try raw milk and we had heard good things about this particular dairy farm.  Dairy does not agree with my stomach so I stay away from it. I have heard from many sources that people who are lactose intolerant can tolerate raw milk.  I may have to give it a try.  I haven't decided yet...

This is how the milk is sold. How cute is that??  Bea and Sugar are the cow's names.

If I do end up trying the raw milk, I'll let you know how it goes!!  Hopefully it doesn't make my stomach explode!!
I also got this today!!!  Can't wait to start baking from it. I think I am going to try the Spaghetti alla Carbonara recipe first!!
