Coconut Chocolate Chip Cookies



I've been trying different paleo chocolate chip recipes. This version is called Coconut Chocolate Chip Cookies.  These cookies are soft and moist and they have a hint of coconut flavor.

Coconut Chocolate Chip Cookies

1 cup coconut flour
1/2 cup coconut oil
3 tbs honey
4 eggs
1 tsp vanilla
1 tsp baking powder
1/2 tsp salt
1/2 finely shredded coconut
bag of chocolate chips (I used 2 Lilly's Dark Chocolate bars sweetened with stevia- chopped up into chunks)

Preheat oven to 350
Melt honey and coconut oil together in microwave
Mix together wet ingredients (coconut oil, honey, eggs, vanilla) in a bowl
Stir in dry ingredients (coconut flour, baking powder, salt, coconut, chocolate chips/chunks)
Line baking sheet with parchment paper
Spoon out dough into small balls and place on parchment paper
Press down on the cookies so they look like the shape of a cooked chocolate chip cookie. (they way they look before cooking is the way they will look after cooking.)
Bake for 8 minutes (or until the bottoms are just starting to brown)
