Easy Weeknight Fish- (and other random happenings)

We have had a crazy few weeks!!  We were out of  town for a while and when we got back we were very busy with cupcake orders!  I was also so excited to have Alison from Paleo/NonPaleo share my Paleo success story on her blog. Go check it out!! http://paleononpaleo.com/paleo-success-stories-erin/
I am so thankful to have a husband who loves to cook. I was baking a batch of cupcakes for a customer so he whipped up a delicious meal for us. It was very tasty and perfect if you don't have a lot of time.

Ingredients:
2 Tilapia fillets
1 cup of mushrooms (pre sliced and rinsed)
1 cup of Pico de Gallo (freshly made from our grocery store)
1 tbsp. Wildtree fajita seasoning
Lemon
1 tbsp. Coconut oil for the pan

Directions:
Coat the tilapia with the fajita seasoning
Put coconut oil in the pan and sauté mushrooms until they are soft
Place the tilapia into the mushrooms and oil and cook 3-4 minutes on each side
Add pico and the juice of a lemon to the mushrooms and tilapia.
Sauté for 3 minutes
Enjoy!

We visited Healthy Way Dairy today. Chet wanted to try raw milk and we had heard good things about this particular dairy farm.  Dairy does not agree with my stomach so I stay away from it. I have heard from many sources that people who are lactose intolerant can tolerate raw milk.  I may have to give it a try.  I haven't decided yet...

This is how the milk is sold. How cute is that??  Bea and Sugar are the cow's names.

If I do end up trying the raw milk, I'll let you know how it goes!!  Hopefully it doesn't make my stomach explode!!

I also got this today!!!  Can't wait to start baking from it. I think I am going to try the Spaghetti alla Carbonara recipe first!!

Summer Spinach Salad with Balsamic Dressing

I love fruit in my salads.  Strawberries and apples are my absolute favorite!!  This salad is perfect for a picnic.   Click here for the balsamic dressing recipe.  It is my favorite!!  I usually make a double or triple batch so that I have leftover dressing for the week.

Summer Spinach Salad
1 package of spinach
1 cup of sliced strawberries
1 apple (sliced)
1/2 cup of chopped walnuts
1 avocado (sliced)
Click here for the balsamic dressing recipe

Mix spinach, strawberries, apples, walnuts, and avocado together in a large bowl
Spoon out individual servings and drizzle with the balsamic dressing

This salad would be delicious with grilled chicken, hamburgers, or as a main dish.
ENJOY!!

How to Eat Out (and not feel like you're missing out) at a Mexican Restaurant... and More!

We are in San Antonio for the South Central Regional Crossfit Competition this weekend!  My gym is competing and so is a good friend from another gym.  We have been to San Antonio one time before and we know how AWESOME their Mexican food is.  When I first changed the way I was eating, I would go to a Mexican restaurant and eat just the meat and veggies.  I was okay with that...but still felt like I was missing out.  I missed the tortillas!!  (A LOT!)  I started experimenting with different coconut flour tortilla recipes.  I found that the one I was using was really hard to work with (even after letting the batter sit for a while.)  I decided to try adding 2 tbsp of almond flour to the batter.  It worked really well!  It stayed together much better and was a lot easier to flip.  We make a big batch of tortillas and keep them in the freezer for when we go out to eat.  They reheat really well!
I purchased a small bag and bring it with me to restaurants.  The tortillas fit perfectly!  This bag is from Thirty-one.

When you get to a restaurant you need to be prepared to talk with the waiter about what you can and can't have on your meat.  If they use oil, it needs to be olive oil.  I ask that they do not use meat that is marinated.  Usually they will just put spices on the meat or salt and pepper.  I talk to them about how I am sensitive to gluten and dairy. I have also found that the guacamole and salsa at most restaurants is homemade and paleo friendly.  But make sure you ask!  If you tell the waiter that you can't have the rice and beans, they will usually give you double vegetables.  It always helps to call ahead as well.

Fill your tortillas with fajita amazing-ness and enjoy!!

Coconut Flour/Almond Flour Tortillas
2/3 c coconut flour
2 tbsp almond flour
1 3/4 cup egg whites
2 cups almond milk/coconut milk/water
1 tsp baking soda
1 tsp salt
Mix all ingredients in bowl
If the mixture is too thick, add more milk/water until it is the consistency of pancake batter
Coat bottom of a non stick pan with olive oil/coconut oil
Pour 1/2 cup of the batter into the pan
When the tortilla is bubbling on top, flip
Cook the bottom side until lightly brown (watch very closely)

So far, Pappasitos has been my favorite restaurant to go to.  They do an amazing job of helping out people who have eating restrictions.  They send a manager over and he/she takes your order and personally sees that it is done correctly.  (I was embarrassed about that at first, but the more I think about it, the more I appreciate it.)
We also stopped for burgers one night.  I used the leftover tortillas as a bun.  It worked out pretty well!!
I found this shirt and bought it (to make fun of myself mostly...) I feel like I ask myself that question ALL the time.  We had a BLAST at regionals.  All the competitors did an awesome job!  It was fun watching the athletes and eating all the great good!
Eating out if you are gf/df/paleo is totally possible.  It just takes a little planning!  Do you have any "eating out" tips that you can share?

Caramelized Onion and Mushroom Burgers

Happy Friday!  I'm glad the weather cleared up because we had grilled burgers on the menu tonight.  I think the key to these burgers is quality meat.  It really makes a difference.  We buy our grass fed hamburger meat from HEB.

Caramelized Onion and Mushroom Burgers

Ingredients:
1 pound of grass fed hamburger
1/2 onion
small package of sliced mushrooms
4 cloves of garlic
1/4 cup balsamic vinegar
1/4 cup olive oil
salt and pepper to taste

Heat olive oil in pan
Mince the onion, and garlic and add to the pan
Cook the onion and garlic until translucent
Add the mushrooms and balsamic vinegar
Add pepper to taste
Cook until mushrooms are tender-stirring occasionally
Add the mushroom mix and hamburger meat to a bowl
Add salt to taste
Mix until hamburger meat and mushroom mixture are combined evenly
Form hamburgers (makes 6 burgers)
Grill for 5-6 minutes on each side

Serve with grilled peppers and spinach.  We ate our burgers with Paleo bread as our "bun."  You could also leave the bun off and top with a fried egg.  YUM!!

This recipe has very few ingredients so it is the perfect meal if you are on a budget!  Visit The Nourishing Gourmet for more money saving tips and recipes.

Chet and I usually go to the grocery store on Saturdays.  This past Saturday, HEB had mahi mahi on sale!!  The mahi mahi was amazing topped with the herb butter sauce.  We sauteed the asparagus with olive oil, balsamic vinegar, salt and pepper.

1/4 cup coconut flour
1 tbsp paprika
1tbsp wildree adobo seasoning

Set broiler to high
In a small bowl scramble egg with a splash of water
Combine 1/4 coconut flour, paprika, adobo seasoning, salt, and pepper on plate
Brush the top of the mahi mahi with egg using a basting brush (or dip mahi mahi into egg mixture)
Sprinkle flour mixture evenly onto the fish and spread it out with your hands
Heat a stainless steal pan with 3 tbsp coconut oil and 2 tbsp olive oil for frying
Cook mahi mahi face down for 6-7 minutes or until crispy brown
Flip mahi mahi over and place in the broiler on high for about 5 minutes
*You might have to cook each fillet separately depending on size of your pan

Herb Butter Sauce:

3 tbsp ghee (or butter)
2 sprigs of thyme
2 sprigs of rosemary

In a pan heat ghee and add herbs
Let simmer for 5-10 minutes
Pour half of the butter sauce over each of the cooked mahi mahi fillets
