Paleo Chocolate Chip Cookies

I've taken a break from blogging for a while. School has started and things have been busy!  I've been planning on posting this recipe for a long time but just haven't gotten around to it. I've been trying different chocolate chip cookie recipes for a while but haven't been happy with the results. Finally I came up with this recipe and it's a keeper!  The cookies are soft and gooey. Just the way I like it!!




Paleo Chocolate Chip Cookies

Ingredients:
1/4 cup palm shortening
2 eggs
3 tbsp honey
2 tsp vanilla
2 tsp salt
2 tsp baking soda
1/2 tsp molasses
1 c coconut palm sugar
2 1/2 c almond flour
1/4 c coconut flour
1/2 bag enjoy life chocolate chips

Directions:
Preheat oven to 375
Add shortening, eggs, vanilla, sugar, molasses, salt, honey, baking soda to a bowl. Mix with a hand mixer.
Stir in almond flour and coconut flour
Stir in chocolate chips.
Spoon out dough onto a cookie sheet and press down very softly to shape. I use a baking mat but spraying with olive oil works well too.
Bake for 7 minutes
Cool and enjoy!!

Easy Weeknight Fish- (and other random happenings)

We have had a crazy few weeks!!  We were out of  town for a while and when we got back we were very busy with cupcake orders!  I was also so excited to have Alison from Paleo/NonPaleo share my Paleo success story on her blog. Go check it out!! http://paleononpaleo.com/paleo-success-stories-erin/ 
I am so thankful to have a husband who loves to cook. I was baking a batch of cupcakes for a customer so he whipped up a delicious meal for us. It was very tasty and perfect if you don't have a lot of time.


Ingredients:
2 Tilapia fillets
1 cup of mushrooms (pre sliced and rinsed)
1 cup of Pico de Gallo (freshly made from our grocery store)
1 tbsp. Wildtree fajita seasoning
Lemon
1 tbsp. Coconut oil for the pan

Directions:
Coat the tilapia with the fajita seasoning
Put coconut oil in the pan and sauté mushrooms until they are soft
Place the tilapia into the mushrooms and oil and cook 3-4 minutes on each side
Add pico and the juice of a lemon to the mushrooms and tilapia.
Sauté for 3 minutes
Enjoy!

We visited Healthy Way Dairy today. Chet wanted to try raw milk and we had heard good things about this particular dairy farm.  Dairy does not agree with my stomach so I stay away from it. I have heard from many sources that people who are lactose intolerant can tolerate raw milk.  I may have to give it a try.  I haven't decided yet...


This is how the milk is sold. How cute is that??  Bea and Sugar are the cow's names.

 
If I do end up trying the raw milk, I'll let you know how it goes!!  Hopefully it doesn't make my stomach explode!!
 
 
I also got this today!!!  Can't wait to start baking from it. I think I am going to try the Spaghetti alla Carbonara recipe first!!

Banana Chocolate Chip Muffins (gf/df/paleo)

coconut flour
eggs
vanilla
honey
almond milk/coconut milk (original flavor)
bananas

olive oil spray

Paleo Brownies (that actually taste good!!)



I have experimented with so many different paleo brownie recipes and I just haven't found "the one."  They are either too chewy, too dry, or too crumbly.  I decided to try making up my own recipe. These paleo brownies taste just like the traditional brownies that you would make from a box or from scratch.  No really- I promise!  Sometimes I feel like the pictures of some of the paleo recipes can be deceiving!  They looked really good in the picture... but when I made the recipe, they didn't quite make the cut.  I am really excited with how these turned out!

Paleo Brownies (that actually taste good!!)
2 eggs
1/2 cup coconut oil
1/8 cup honey
1 tsp vanilla
1/4 cup water or almond milk/coconut milk
1/4 cup + 2 tbsp coconut palm sugar
2/3 + 2 tbsp cup cocoa
2/3 cup almond flour
1/2 tsp salt
1/2 tsp baking soda

Preheat oven to 350
Mix eggs, coconut oil, honey, vanilla, water (or almond milk/coconut milk) in a bowl with a hand mixer
Add coconut palm sugar, cocoa, almond flour, salt, and baking soda to the liquid mixture and stir with a spoon until lump free
Spray a small rectangular pan with olive oil spray
Bake for 13 minutes

Summer Spinach Salad with Balsamic Dressing

I love fruit in my salads.  Strawberries and apples are my absolute favorite!!  This salad is perfect for a picnic.   Click here for the balsamic dressing recipe.  It is my favorite!!  I usually make a double or triple batch so that I have leftover dressing for the week.

Summer Spinach Salad
1 package of spinach
1 cup of sliced strawberries
1 apple (sliced)
1/2 cup of chopped walnuts
1 avocado (sliced)

Mix spinach, strawberries, apples, walnuts, and avocado together in a large bowl
Spoon out individual servings and drizzle with the balsamic dressing

This salad would be delicious with grilled chicken, hamburgers, or as a main dish.

Paleo Doughnuts




Last Friday was National Doughnut Day!  I kept seeing different paleo doughnut recipes that were posted on Facebook and I got inspired to try my own recipe.  I brought the doughnuts to my school's end of the year party and everyone loved them!!  I am a sucker for cinnamon sugar, but the chocolate glaze was a HUGE hit!!  


Paleo Doughnuts

Ingredients:
1 cup almond flour
1/2 cup + 2 tbsp cup coconut flour
2 eggs
1 heaping tsp vanilla
1/4 cup honey
1/2 cup water
1/2 cup plus 2 tbsp almond milk/coconut milk (original flavor)
1/4 tsp baking soda
1/4 tsp salt
olive oil spray
doughnut pan 



Preheat oven to 350
Mix all wet ingredients in a small bowl (eggs, vanilla, honey, water, milk)
Mix the dry ingredients in a bowl (almond flour, coconut flour, salt, baking soda)
Combine wet ingredients and dry ingredients
Stir until lump free
Grease a doughnut pan with olive oil spray
Spoon the batter into a large plastic bag and cut the tip (to make a pastry bag)
Squeeze the batter from the bag in a neat circle, into the doughnut pan 

Bake for 18 minutes or until the top and edges are brown.
                                    


Chocolate Glaze:
1/2 bag enjoy life chocolate chips (melted)
2 tbsp coconut oil (melted)
Mix ingredients together in a small bowl and dip the top of the cooled doughnuts into the glaze.  

Cinnamon Sugar:
1/4 cup coconut palm sugar
1 tbsp cinnamon 
1/2 cup coconut oil (melted)
Mix the coconut palm sugar and cinnamon on a small plate
Pour the melted coconut oil onto a small plate
Dip the top of the cooled doughnuts into the oil and then into the cinnamon sugar mixture.
