Avocado Fries With Sweet Mustard Dipping Sauce



I saw a recipe on Pinterest for avocado fries and I came home from school determined to make some.  I changed the recipe to make it my own.  They turned out wonderful!

Avocado Fries
2 avocados
1 cup coconut flour
1/4 cup almond flour
1 tbsp paprika
1tbsp garlic powder
1 tbsp onion powder
1 tsp salt and pepper (to taste)
3 eggs
coconut oil/olive oil for frying (I used a mixture)

Sweet Mustard Dipping Sauce
3 tbsp dijon mustard
1 tbsp balsamic vinegar
4 drops liquid stevia (you could use a squirt of honey instead)

Mix coconut flour almond flour, paprika, garlic powder, onion powder, salt and pepper on a plate
Mix eggs with a splash of water in a bowl
Slice avocados into "fry" size strips
Dip avocado slices into egg mixture, then coat with the flour mixture
Dip the avocado again into the egg mixture, then back into the flour mixture for a second coating
Repeat until all avocados are coated
Pour coconut oil/olive oil into pan and heat for frying
Place coated avocados into oil and fry for 1 minute on each side (or until brown)
After cooking, place avocado strips on a paper towel or cooling rack
In a small bowl mix ingredients for the sweet mustard dipping sauce
Enjoy!!
