<strong><u>Paleo Chocolate Chip Cookies</u></strong><br />
<br />
Ingredients:<br />
1/4 cup palm shortening<br />
2 eggs<br />
3 tbsp honey<br />
2 tsp vanilla<br />
2 tsp salt<br />
2 tsp baking soda<br />
1/2 tsp molasses<br />
1 c coconut palm sugar<br />
2 1/2 c almond flour<br />
1/4 c coconut flour<br />
1/2 bag enjoy life chocolate chips<br />
<br />
Directions:<br />
Preheat oven to 375<br />
Add shortening, eggs, vanilla, sugar, molasses, salt, honey, baking soda to a bowl. Mix with a hand mixer.<br />
Stir in almond flour and coconut flour<br />
Stir in chocolate chips.<br />
Spoon out dough onto a cookie sheet and press down very softly to shape. I use a baking mat but spraying with olive oil works well too.<br />
Bake for 7 minutes<br />
Cool and enjoy!!<br />

Ingredients:<br />
2 Tilapia fillets <br />
1 cup of mushrooms (pre sliced and rinsed)<br />
1 cup of Pico de Gallo (freshly made from our grocery store)<br />
1 tbsp. Wildtree fajita seasoning <br />
Lemon<br />
1 tbsp. Coconut oil for the pan<br />
<br />
Directions:<br />
Coat the tilapia with the fajita seasoning <br />
Put coconut oil in the pan and sauté mushrooms until they are soft<br />
Place the tilapia into the mushrooms and oil and cook 3-4 minutes on each side<br />
Add pico and the juice of a lemon to the mushrooms and tilapia. <br />
Sauté for 3 minutes<br />

We visited Healthy Way Dairy today. Chet wanted to try raw milk and we had heard good things about this particular dairy farm. Dairy does not agree with my stomach so I stay away from it. I have heard from many sources that people who are lactose intolerant can tolerate raw milk. I may have to give it a try. I haven't decided yet...<br />

I have experimented with so many different paleo brownie recipes and I just haven't found "the one." They are either too chewy, too dry, or too crumbly. I decided to try making up my own recipe. These paleo brownies taste just like the traditional brownies that you would make from a box or from scratch. No really- I promise! Sometimes I feel like the pictures of some of the paleo recipes can be deceiving! They looked really good in the picture... but when I made the recipe, they didn't quite make the cut. I am really excited with how these turned out! <br />
<br />
<b><u>Paleo Brownies (that actually taste good!!)</u></b><br />
2 eggs<br />
1/2 cup coconut oil<br />
1/8 cup honey<br />
1 tsp vanilla <br />
1/4 cup water or almond milk/coconut milk<br />
1/4 cup + 2 tbsp coconut palm sugar<br />
2/3 + 2 tbsp cup cocoa<br />
2/3 cup almond flour<br />
1/2 tsp salt<br />
1/2 tsp baking soda<br />
<br />
Preheat oven to 350<br />
Mix eggs, coconut oil, honey, vanilla, water (or almond milk/coconut milk) in a bowl with a hand mixer<br />
Add coconut palm sugar, cocoa, almond flour, salt, and baking soda to the liquid mixture and stir with a spoon until lump free<br />
Spray a small rectangular pan with olive oil spray<br />
Bake for 13 minutes<br />

I love fruit in my salads. Strawberries and apples are my absolute favorite!! My birthday was in April and I really wanted to have a cake. I was so new to paleo and I hadn't made any cakes yet. I was nervous to make my own from scratch so I ordered a paleo cake mix. The cake turned out okay, but it wasn't your typical chocolate cake. It was really heavy and so rich. Since then, I have created many different cakes and coffee cakes that are delicious. My <a href="http://www.littleekitchen.blogspot.com/2013/05/paleo-pineapple-upside-down-cake.html" rel="nofollow" target="_blank">Paleo Pineapple Upside Down Cake</a> is very moist and perfectly sweet. Last weekend, I decided to try my hand at chocolate cake. The end result was <b><u>so</u></b> moist and the frosting was perfect! According to my husband, it is his favorite cake I've made so far. My husband and I are both teachers so grab and go breakfasts are very important to us. We will make a huge batch of my <a href="http://www.littleekitchen.blogspot.com/2013/05/3-ingredient-protein-pancakes.html" rel="nofollow" target="_blank">3 Ingredient Protein Pancakes</a>, or a week size portion of scrambled eggs and sausage. We also love making this breakfast casserole. <br />
<br />
<strong><u>Grab and Go Breakfast Casserole</u></strong><br />
1/2 onion roughly chopped<br />
1 yellow, green, or orange pepper roughly chopped<br />
3 cloves of garlic<br />
1 cup spinach<br />
1 small package of sliced mushrooms<br />
17 eggs<br />

2 tsp salt and pepper<br />
paprika<br />
large baking dish (or metal throw-away dish)<br />
Olive oil spray<br />

Preheat oven to 400<br />
Put onion, pepper, garlic, and spinach into a food processor <br />
Pulse until you reach the desired consistency (I usually pulse mine until minced)<br />
Whisk 17 eggs with a splash of water (or almond milk/coconut milk)<br />
Add 2 tsp salt and pepper to eggs<br />
Spray the bottom and sides of your pan with olive oil<br />
Evenly line the bottom of the pan with <a href="http://www.julianbakery.com/bread-product/paleo-bread-coconut/" rel="nofollow" target="_blank">julianbakery paleo bread made with coconut flour</a><br />
Spread out vegetable mixture over the bread<br />
Sprinkle sliced mushrooms over the vegetable mixture<br />
Pour the eggs into the pan<br />
Sprinkle paprika on top of the casserole<br />
Bake for 50 minutes or until brown on top and a toothpick comes out clean<br />

I love all these fresh vegetables! You can leave them chunky, but I like the texture better when they are minced up. After the casserole is done cooking, separate individual sized portions out for the week. Place each portion in it's own grab and go plastic bag. Keep refrigerated. When you are ready for breakfast, pull one out and microwave on a plate for 1 minute. <br />

We woke up last Saturday craving pancakes! The last time we made pancakes we made <a href="http://www.littleekitchen.blogspot.com/2013/05/sausage-stuffed-pancakes.html" rel="nofollow" target="_blank">Sausage Stuffed Pancakes</a>. They were delicious! I wanted to make a sweet pancake this time. We had some very ripe bananas (my favorite) and I LOVE the cinnamon crumble from my <a href="http://www.littleekitchen.blogspot.com/2013/05/cinnamon-crumble-coffee-cake.html" rel="nofollow" target="_blank">Cinnamon Crumble Coffee Cake</a> recipe. The cinnamon and banana combination was perfect. It was rich, and gooey! It really reminded me of an elephant ear that you would get from a fair. YUM!<br />

<strong><u>Banana and Cinnamon Crumble Stuffed Pancakes</u></strong><br />
<br />
4 eggs<br />
1 cup coconut milk/almond milk<br />
1 tablespoon honey<br />
1 heaping teaspoon vanilla extract<br />
1/2 cup <span style="color: black;">coconut flour</span><br />
1/2 teaspoon <span style="color: black;">salt</span><br />
1 teaspoon baking soda<br />
coconut oil/olive oil for frying<br />

It should be crumbly. If not, add more almond flour one tablespoon at a time.</span></span></div>
Coat a non stick pan with coconut oil or olive oil and heat (I used coconut oil)<br />
Pour 1/4 cup of the pancake batter into the pan<br />
Cover the top of the pancake with bananas<br />
Sprinkle 1 tbsp of the crumble mixture on top of the bananas <br />
Pour 1/4 cup of the pancake batter <u>on top</u> of the banana and crumble mixture<br />
When the bottom of the pancake is brown use 2 spatulas to flip the pancake over. (Be careful!) <br />
Cook the other side of the pancake until it is brown <br />
Repeat until pancake batter is gone<br />
ENJOY!! <br />

We are in San Antonio for the South Central Regional Crossfit Competition this weekend! My gym is competing and so is a good friend from another gym. We have been to San Antonio one time before and we know how AWESOME their Mexican food is. When I first changed the way I was eating, I would go to a Mexican restaurant and eat just the meat and veggies. I was okay with that...but still felt like I was missing out. I missed the tortillas!! (A LOT!) I started experimenting with different coconut flour tortilla recipes. I found that the one I was using was really hard to work with (even after letting the batter sit for a while.) I decided to try adding 2 tbsp of almond flour to the batter. It worked really well! It stayed together much better and was a lot easier to flip. We make a big batch of tortillas and keep them in the freezer for when we go out to eat. They reheat really well! <br />

When you get to a restaurant you need to be prepared to talk with the waiter about what you can and can't have on your meat. If they use oil, it needs to be olive oil. I ask that they do not use meat that is marinated. Usually they will just put spices on the meat or salt and pepper. I talk to them about how I am sensitive to gluten and dairy. I have also found that the guacamole and salsa at most restaurants is homemade and paleo friendly. But make sure you ask! If you tell the waiter that you can't have the rice and beans, they will usually give you double vegetables. It always helps to call ahead as well. </div>

1 3/4 cup egg whites</div>

2 cups almond milk/coconut milk/water</div>

1 tsp baking soda</div>

1 tsp salt </div>

Mix all ingredients in bowl</div>

If the mixture is too thick, add more milk/water until it is the consistency of pancake batter</div>

I first saw this idea at <a href="http://www.thepaleomom.com/2013/02/grugs-barbecued-stuffed-bananas-a-recipe-inspired-by-the-croods.html" target="_blank">The Paleo Mom</a>. The original recipe sounds and looks AMAZING!! I decided to try my own version of the recipe. We made this last night and Chet was drooling over the results. It was DELICIOUS! Ooey, gooey, chocolate goodness!! <br />

<b><u>Fill and Grill Bananas</u></b><br />

Ingredients:<br />
1 ripe banana per person<br />
2 tbsp almond butter per banana<br />
1 tbsp honey per banana<br />
1 tsp ghee per banana<br />
1/2 tsp cinnamon per banana<br />
1 tbsp coconut palm sugar per banana<br />
2 tbsp carob chips (or enjoy life chocolate chips)<br />
aluminum foil<br />
<br />
Slice 1 ripe banana down the middle (don't slice all the way through)<br />
Separate the banana from the skin so there is room to fill it (keep the bottom intact)<br />
Spread out 2 tbsp of almond butter onto the banana<br />
Drizzle 1 tbsp of honey over the almond butter<br />
Sprinkle 1/2 tsp cinnamon over the honey<br />
Take 1 tsp of ghee and spread all down the inside sides of the banana (close to the banana skin)<br />
Sprinkle the top of the banana with coconut palm sugar<br />
Wrap the banana in aluminum foil<br />
Grill for 10 minutes (watch very closely)<br />
After grilling, sprinkle grilled banana with 2 tbsp of carob chips<br />

I am ready for Summer, and was excited about the mango, watermelon, macadamia nuts, and coconut flour. I wanted to create a Summer dish with those ingredients and came up with Mango and Watermelon Poke Cake. I was really pleased with the way it turned out. It is the perfect summer dessert! The recipes are due Friday so I'll let you know how I do! (Not expecting too much....I'm sure there are a TON of entries.) It was so fun thinking outside of the box with different ingredients. Teacher appreciation week was last week and I am so blessed to have a group of students and parents who show appreciation throughout the year with their kind words and gifts. They are also so considerate of my different dietary needs. Each day, the parents sent in a different treat. Bring your teacher's favorite candy bar, flowers, Starbucks gift card, etc. Since I can't have candy bars, parents sent in Larabars, bananas, and I even had one parent send in a huge, beautiful pineapple! The pineapple screamed "PINEAPPLE UPSIDE DOWN CAKE!!" So of course, I HAD to attempt it! I have to be honest, I have never made a pineapple upside down cake before. It turned out AMAZING! Chet and I probably could have devoured the entire cake but we decided to take some samples into school for people to try. Everyone thought it was delicious! <br />

It's Saturday morning!! Every Saturday, I try out a new recipe. A few weeks back, I made blueberry coconut coffee cake. It was so moist and sweet. I couldn't wait to try another coffee cake variation. Growing up, my favorite breakfast was always cinnamon coffee cake. Mince the onion, and garlic and add to the pan<br />
Cook the onion and garlic until translucent<br />
Add the mushrooms and balsamic vinegar<br />
Add pepper to taste<br />
Cook until mushrooms are tender-stirring occasionally<br />
Add the mushroom mix and hamburger meat to a bowl<br />
Add salt to taste<br />
Mix until hamburger meat and mushroom mixture are combined evenly<br />
Form hamburgers (makes 6 burgers)<br />
Grill for 5-6 minutes on each side<br />

Serve with grilled peppers and spinach. We ate our burgers with Paleo bread as our "bun." You could also leave the bun off and top with a fried egg. YUM!! <br />

We had field day at school today and the parents brought TONS of snacks for the kids. We had leftover apple slices so I decided that I would use the leftovers for apple crisp. It turned out AMAZING!!! This recipe could easily be doubled to make a larger crisp.<br />
<br />
<b><u>Mini Paleo Apple Crisp</u></b><br />
<br />
2 cups apples (peeled, cored, and sliced thin)<br />
1 tsp honey<br />
pinch of salt<br />
2 tbsp ghee (or butter)<br />
1 tbsp coconut palm sugar<br />
1 tsp lemon juice<br />
olive oil for cooking<br />
<br />
<b><u>Crumble Topping</u></b><br />
<br />
5 tbsp almond flour<br />
3 tbsp ghee<br />
2 tbsp coconut palm sugar<br />
1 tsp honey<br />
1 tsp cinnamon<br />
1 pinch salt<br />
<br />
Preheat the oven to 350<br />
Combine the apples, honey, salt, coconut palm sugar, and lemon juice in a small bowl<br />
Heat up 2 tbsp of ghee in the microwave and pour into the apple mixture<br />
Stir the apple mixture until coated<br />
Spray olive oil onto small baking dish<br />
Spoon the apple mixture into a greased baking dish<br />
Melt 3 tbsp of ghee in the microwave<br />
Add the almond flour, coconut palm sugar, honey, cinnamon, and salt to the ghee and stir<br />
Evenly sprinkle crumble topping over the apples with your hand<br />
Bake for 25 minutes (or until bubbly and the apples are soft)<br />
Serve with coconut milk, almond milk, or regular vanilla ice cream. <br />

Chet and I make these when we are in a hurry, but still want something warm and tasty. We have also made a big batch of them on a Sunday and bagged them up in individual portions for the week. They reheat really well!<br />
<br />
<br />
<b><u>3 Ingredient Protein Pancakes</u></b><br />
<br />
1 scoop protein powder (we used vanilla this time, but chocolate is equally as delicious)<br />
3 eggs<br />
splash of almond milk (dairy milk would work as well)<br />
coconut oil/olive oil for pan<br />
<br />
*optional: fruit (strawberries, banana, or blueberry, etc.) chocolate chips<br />
*optional: pinch of salt (I like to add it to the batter, but its not necessary) <br />
<br />
Combine protein powder, eggs, and milk in a small bowl<br />
Whisk until combined<br />
Mixture should be the consistency of pancake batter (if too thick, add more milk)<br />
Cover bottom of the pan with oil and heat (we used coconut oil but olive oil would work as well)<br />
Pour 3 small pancakes into pan (your batter should make 6 small pancakes)<br />
If you decide to add fruit or chocolate chips, place it on top of the pancake as it is cooking<br />
When you start to see the edges turn brown, flip the pancake over and let brown on the other side<br />
You can eat it plain or serve it with blueberry syrup, honey, etc. <br />

Chet and I usually go to the grocery store on Saturdays. This past Saturday, HEB had mahi mahi on sale!! The mahi mahi was amazing topped with the herb butter sauce. We sauteed the asparagus with olive oil, balsamic vinegar, salt and pepper. <br />
<br />
<b><u>Coconut Flour Encrusted Mahi Mahi With Herb Butter Sauce:</u></b><br />
<b><u><br /></u></b>
2 mahi mahi fillets<br />
1/4 cup coconut flour<br />
1 tbsp paprika<br />
1tbsp wildree adobo seasoning<br />
1 tsp salt and pepper (to taste)<br />
1 egg<br />
lemon (optional)<br />
3 tbsp coconut oil and 2 tbsp olive oil for frying<br />
<br />
Set broiler to high<br />
In a small bowl scramble egg with a splash of water<br />
Combine 1/4 coconut flour, paprika, adobo seasoning, salt, and pepper on plate<br />
Brush the top of the mahi mahi with egg using a basting brush (or dip mahi mahi into egg mixture)<br />
Sprinkle flour mixture evenly onto the fish and spread it out with your hands<br />
Heat a stainless steal pan with 3 tbsp coconut oil and 2 tbsp olive oil for frying<br />
Cook mahi mahi face down for 6-7 minutes or until crispy brown<br />
Flip mahi mahi over and place in the broiler on high for about 5 minutes<br />
*You might have to cook each fillet separately depending on size of your pan<br />

I saw a recipe on Pinterest for avocado fries and I came home from school determined to make some. I changed the recipe to make it my own. They turned out wonderful! <br />
<br />
<b><span class="Apple-style-span" style="text-decoration: underline;">Avocado Fries</span></b><br />
2 avocados<br />
1 cup coconut flour<br />
1/4 cup almond flour<br />
1 tbsp paprika<br />
1tbsp garlic powder<br />
1 tbsp onion powder<br />
1 tsp salt and pepper (to taste)<br />
3 eggs<br />
coconut oil/olive oil for frying (I used a mixture)<br />
<br />
<b><span class="Apple-style-span" style="text-decoration: underline;">Sweet Mustard Dipping Sauce</span></b><br />
3 tbsp dijon mustard<br />
1 tbsp balsamic vinegar<br />
4 drops liquid stevia (you could use a squirt of honey instead)<br />
<br />
Mix coconut flour almond flour, paprika, garlic powder, onion powder, salt and pepper on a plate<br />
Mix eggs with a splash of water in a bowl<br />
Slice avocados into "fry" size strips<br />
Dip avocado slices into egg mixture, then coat with the flour mixture<br />
Dip the avocado again into the egg mixture, then back into the flour mixture for a second coating<br />
Repeat until all avocados are coated<br />
Pour coconut oil/olive oil into pan and heat for frying<br />
Place coated avocados into oil and fry for 1 minute on each side (or until brown)<br />
After cooking, place avocado strips on a paper towel or cooling rack<br />
In a small bowl mix ingredients for the sweet mustard dipping sauce<br />
Enjoy!!<br />

1 cup almond flour<br />
3 eggs<br />
2 tbsp coconut oil<br />
3 tbsp almond milk/coconut milk<br />
1/2 tsp salt<br />
1/2 tsp baking soda<br />
coconut oil for cooking<br />
sausage links cut into bite sized pieces<br />
<br />
Mix eggs coconut oil, almond milk/coconut milk in a bowl<br />
Add in almond flour, salt, and baking soda and mix until combined<br />
Cover pan with coconut oil and turn on medium for about 30 seconds<br />
Pour small amount of batter into pan and place a sausage bite in the middle<br />
Let cook until it browns on the bottom<br />
Fold pancake over the sausage and let cook on one side until brown<br />
Flip and cook on the other side until brown<br />
Let cool and repeat until batter is gone<br />

I've been trying different paleo chocolate chip recipes. This version is called Coconut Chocolate Chip Cookies. These cookies are soft and moist and they have a hint of coconut flavor. <br />
<br />
<b><span class="Apple-style-span" style="text-decoration: underline;">Coconut Chocolate Chip Cookies</span></b><br />
<br />
1 cup coconut flour<br />
1/2 cup coconut oil<br />
3 tbs honey<br />
4 eggs<br />
1 tsp vanilla<br />
1 tsp baking powder<br />
1/2 tsp salt<br />
1/2 finely shredded coconut<br />
bag of chocolate chips (I used 2 Lilly's Dark Chocolate bars sweetened with stevia- chopped up into chunks)<br />
<br />
Preheat oven to 350<br />
Melt honey and coconut oil together in microwave<br />
Mix together wet ingredients (coconut oil, honey, eggs, vanilla) in a bowl<br />
Stir in dry ingredients (coconut flour, baking powder, salt, coconut, chocolate chips/chunks)<br />
Line baking sheet with parchment paper<br />
Spoon out dough into small balls and place on parchment paper<br />
Press down on the cookies so they look like the shape of a cooked chocolate chip cookie. (they way they look before cooking is the way they will look after cooking.)<br />
Bake for 8 minutes (or until the bottoms are just starting to brown)<br />

Who needs McDonald's when you can make your own chicken nuggets that are WAY healthier for you?! They are so tasty!!<br />

<b><span class="Apple-style-span" style="text-decoration: underline;">Paleo</span></b><b><span class="Apple-style-span" style="text-decoration: underline;"> Chicken Nuggets</span></b><br />
<br />
3 chicken breasts cut into chunks<br />
coconut oil or olive oil for frying<br />
1 cup coconut flour<br />
3 tbsp garlic powder<br />
3 tbsp onion powder<br />
3tbsp paprika<br />
2 tsp salt and pepper (to taste)<br />
3 eggs<br />
<br />
In a large Ziploc bag, mix coconut flour, garlic powder, onion powder, paprika, salt and pepper<br />
In a small bowl scramble eggs with a splash of water<br />
Dip a handful of chicken breast chunks into the eggs and then place them into the Ziploc bag. Shake<br />
Take chicken out and place back into the eggs. Then put the chicken back into the bag and shake a second time. <br />
Repeat until all of the chicken is coated<br />
Cover a pan with coconut oil or olive oil and heat just until it starts to bubble. (I used a mix of the two)<br />
Place chicken into oil and fry for 3 minutes on each side<br />
Place cooked chicken onto a cooling rack or paper towels to cool<br />
Enjoy!<br />

1/2 cup shredded coconut (I used finely shredded)<br />
1 tsp ghee (or butter)<br />
1 tsp salt<br />
1 chocolate bar (I use Lilly's Dark Chocolate sweetened with stevia)<br />
Mini cupcake tins<br />
<br />
Heat ghee/butter in a small bowl/cup<br />
Mix ingredients until combined<br />
Use a spoon to measure out 1 tbsp of the almond butter mixture<br />
Roll mixture into a ball and place in cupcake tins<br />
Repeat until all of the almond mixture is gone<br />
Melt chocolate bar in microwave<br />
Spoon chocolate into the cupcake tin until it covers the almond butter mixture<br />
Place in freezer to set for at least 30 minutes<br />
<br />
*If you are not going to eat all of the Coconut Almond Butter Cups at one time, place back into freezer in a plastic bag so they don't melt!<br />
